Hi everyone, welcome to The Gluten Free Cuisine.

The topic of this site is very close to my heart because I have a gluten intolerance that use to run my life.

When I visited doctors, I was always given medications to treat the pain, but they never discovered what was at the core of it all. I was tired of constantly taking all the meds because it would help for a little bit and then wear off. Oftentimes, I suspected they thought I was just complaining about nothing because my symptoms didn’t fit any traditional mold.

I eventually went to a nutritionist (for an entirely different reason), but fate stepped in. My nutritionist — whom I will forever be grateful to — introduced me to what gluten intolerance and Celiac disease are. She told me changes to my diet would ease the daily problems I was experiencing. At first, I was really skeptical because I just didn’t believe that food was that powerful. Slowly, I tried the diet changes she recommended, and I was astonished when all of my symptoms quickly improved and eventually went away for good. And I absolutely loved that I didn’t need to take any more pills.

From that point on, I’ve enjoyed life without the pain. Now, it’s unusual if I don’t feel good every day!
